Pesto Breakfast Potatoes

These potatoes are an easy way to add some kick to your breakfast or brunch. First dice the potatoes into about 1/2 peices, then microwave or steam for about 5 minutes or until they are mostly cooked through. This will make them cook much quicker in the pan. Throw the cooked potato into a hot skillet(medium high is fine) in one layer if possible:

Now just let them cook for a good 5 minutes and then test them. If they easily come up off the pan, then go ahead and flip them/stir them to get the other side cooking, but if they stick, don’t freak out, they just need more time. If they are like really really stuck, then add a bit more olive oil or butter, but trust me,when they are ready to come up, you’ll know it.

So keep browning for another few minutes. When they are all crispy and golden and yummy, remove to a medium bowl and add a couple tablespoons of homemade pesto. Mix well, and then make sure they are seasoned enough…add salt and pepper if needed. I like to add a fried egg and some parmesan on top and go to town! YUM.

Recipe:

5-6 small waxy potatoes(red or white)

2 Tbl Pesto(homemade if you can)

Olive oil for cooking

salt and pepper, and grated parmesan.
