Parsnips are amazing . They are incredible healthy, and have a sort of nutty sweet flavour. They also happen to make an amazing puree as an alternative to mashed potatoes.
Its super easy too. Just peel and trim the ends from your parsnips. Cut into chunks and boil until fork tender. Add to a food processor with butter, stock, maple syrup and parmesan cheese. Blend until smooth…add more stock/olive oil if you need to thin it out a bit.
Here’s the Recipe:
- 5-6 Medium parsnips, trimmed & peeled
- 1 Tbl Organic butter
- 2 Tbl Vegetable stock
- 1 Tbl Maple Syrup
- 2 Tbl Grated parmesan
- Salt & Pepper to taste
- Peel and trim the parsnips. Cut into 2 inch pieces & add to boiling salted water.
- Cook until fork tender. Place in food processor with remaining ingredients.
- Add additional stock or olive oil as needed to thin out the puree.
