Blueberry Coconut Clafoutis


I love clafoutis because it’s not overly sweet and it’s really all about the fruit. It’s basically just fruit baked in a simple custard. The classic is with cherries but I used blueberries and used coconut milk so it’s dairy free! Here’s what you do…

First add your fruit to an oven safe dish, like so…

This is only half the fruit I used. It should essentially be a little bit of batter with a lot of fruit. Next mix together coconut milk, coconut, vanilla, flour, eggs and sugar with a hand mixer until smooth. Pour over the berries and bake at 180C for about 30 minutes, or until a toothpick comes out clean.

Dust the top with icing sugar(powdered sugar) or more coconut. Scoop it out with a spoon and serve warm.

Blueberry Coconut Clafoutis


  • 1 1/2 Cups Coconut Milk
  • 1/4 Cup Desicated Coconut
  • 1 tsp Vanilla
  • 1/3 Cup Plain Flour
  • 2 Eggs
  • 1/4-1/2 Cup Sugar(Depending on the sweetness of the fruit)
  • 2-3 Cups Blueberries(or your fruit of choice)

Cooking Directions

  1. Mix all ingredients together(except fruit) with a hand mixer.
  2. Preheat oven to 180C. Add fruit to oven proof dish.
  3. Pour batter over fruit. Bake at 180C until a toothpick comes out clean, about 25-30 minutes.
