Vanilla Poached Pears

Poached pears are simple to make and incredibly yummy.  I first made these a few years ago for Christmas using red wine and spices, but this method is just as delicious, with white wine and vanilla.

First peel pears, cut in half and core.

Place pears in a saucepan with wine, vanilla, and sugar. Simmer gently until the pears are fork tender. Remove pears and reduce the syrup by about half.

While pears are cooking, mix mascarpone, maple syrup and apple juice concentrate. Place a dollop in each pear and spoon some of the syrup over. And that’s it!

Vanilla Poached Pears


  • 2 Bartlett Pears, ripe but not too soft
  • 2 Cups White wine(I used sauv blanc)
  • 1/4 Cup Sugar
  • 1 Vanilla bean, or 1tsp vanilla bean paste
  • 3Tbl Mascarpone
  • 1tsp Maple Syrup
  • 1tsp Apple Juice concentrate

Cooking Directions

  1. Peel, halve and core pears
  2. Add wine, sugar and vanilla to pan along with pears.
  3. Cook gently for about 15 minutes, covered, or until pears are fork tender.
  4. Remove pears and continue to reduce the syrup.
  5. Mix mascarpone with maple syrup and apple juice concentrate
  6. Add a dollop to the center of each pear.
  7. Spoon some of the reduced syrup over and sprinkle with cinnamon.
