October Sun Galette

A galette is a fancy way to say free form tart. It’s one of the easiest desserts to make, and is great for using up any fruit you have laying around. I found these amazing october sun plums, and the slightly tart, sweet flavour works perfectly.

All you do is take one sheet of shortcrust pastry(can be storebought or homemade). Now thinly slice the plums and place in the center of the pastry.

Next, I added  apple juice concentrate in place of sugar. Why? Since this is a fruit dessert, the apple flavour is a nice complement to the plums. Now gently fold up the sides of the pastry and crimp together. Sprinkle with cinnamon and a bit of sugar on the pastry.

Now as you can see, my pastry folding skills are not amazing, but as long as its a mostly even thickness all around, you’ll be fine. Add a pat of butter on top and place in a 180C oven for about 30 minutes or until the pastry is golden  and the fruit is bubbling.

Top with whipped cream or ice cream.

Note: You may have some extra juices that escape from the tart, and if that bothers you  just mix the plums at the start with a little corn flour.

Here’s The Recipe:
