Brussels with Pine Nuts and Crispy Bacon

I love brussels sprouts! And so should you. They get a bad rap but if you cook them the right way they are really good.

If you cut them in half or quarters, you can impart flavour into all those layers inside.

While you’re prepping your brussels, toast some pinenuts in a dry pan until just golden. Next, finely chop some bacon, and fry in a semi hot pan until crispy.

Remove the bacon bits, and add in your brussels sprouts. If you just try to saute them, it could take quite a while, so you’ll need to add some water and cover them for 3-4 minutes. Alternatively, you can steam them ahead of time. Next, continue frying in the bacon fat, then add back in the bacon peices and pinenuts and cook for a couple more minutes.

At the last minute, add a bit of lemon juice just to cut the rich flavours. At thats it. Yum!

Brussels Sprouts with Bacon

Ingredients

  • 1Kg Baby Brussels sprouts, trimmed and halved
  • 3-4 Slices Bacon, diced
  • 1/4 Cup Toasted Pinenuts
  • 1/2 Lemon, juiced
  • Pepper & Olive oil to taste

Cooking Directions

  1. Trim the ends from brussels and cut in half. Toast pinenuts,and dice bacon
  2. Fry bacon until crispy, then remove to another dish. Add brussels to pan.
  3. Add a bit of water, and cover to steam the brussels for 3-4 minutes.
  4. Take lid off and continue cooking the brussels on medium high, adding back in the bacon & pinenuts
  5. Add the lemon juice, and serve.
