Asian Chicken Noodle Bowl

These noodles are really easy and versatile. You can easily substitute the chicken for tofu  for a yummy vegetarian meal too. I find myself making these in some version about once a week. Here goes:

If you have time, marinade the noodles in mirin and soy sauce. If you don’t have mirin in your pantry I suggest you go out and get some asap. It adds amazing flavour and you should be able to find it in the asian section at your market.


 

So, cut your chicken into bite size pieces. Then add some soy and mirin(not your marinade) to a saucepan and bring to a simmer. Add chicken and let simmer for a few minutes on medium low until nearly cooked. Next, add a beaten egg to the pan, and then put the lid on a take off the heat. After a couple minutes, remove lid and check to see that everything is cooked. Mix egg into chicken and sauce.

While the chicken is cooking, cook your noodles according to package(I think its about 8 minutes). Add your noodles to a deep bowl, then add some of the chicken with a bit of the cooking liquid, and then any garnishes you like. I used chopped carrot, green onion, and sesame seeds. Stir everything together and enjoy.

Ingredients

  • 4 Chicken Thighs
  • 3Tbl Soy Sauce(or Tamari)
  • 3Tbl Mirin
  • 1 Egg
  • Handful Shredded Carrot
  • 2Tbl Sliced green onion(spring onion)
  • 1tsp Sesame seeds
  • 1 Package (3 servings per package)

Cooking Directions

  1. Marinate chicken overnight if possible in soy sauce and mirin. Cut into bite size pieces.
  2. Add new soy sauce and mirin to a small saucepan and bring to a simmer
  3. Add chicken and cook for a few minutes until nearly done.
  4. Bring a separate pan of water to boil and cook noodles(approx 8 minutes)
  5. Add a beaten egg to the pan. Put lid on and remove from heat
  6. Let sit for 3 minutes. Check to see that all ingredients are cooked.
  7. Place noodles in bowl, then add chicken and some sauce. Add garnishes(carrot, onion, sesame)
  8. Additional garnishes: chili, edamame, sliced mushrooms, sesame oil
