Fresh Corn with Bacon


We are coming to the end of summer here in Sydney, and that means the end of fresh corn too. So, I thought I would do one last corn recipe before its gone! This is a side dish that everyone will love. So, let’s get started. Here are your basic ingredients(and I didn’t use the parsley in the end). You can’t get much easier than 3 ingredients.

First, shuck 5 ears of corn. There are a few ways to do this, but personally I think that no matter what,you’ll make a bit of a mess. See?

Here I have a medium bowl with a glass in the middle. The idea is that the glass will hold up the corn and as you cut, the corn will fall into the bowl. This does work, but I found it almost as easy just to put the corn on the bottom of the bowl. Also, make sure you cut off the kernels, and then use the back of your knife to get all the juice and goodness out of the corn.

Next, cut your onion. If you are lacking the skills to do this, hopefully these pictures help. First, cut the onion in half then take the skin off. Then cut into “planks” but dont go quite to the end of the onion…

Now, turn the knife parallel to the onion and cut 3 -4 slices lengthwise, so you have “sticks”( and be careful!). Last, slice into cubes…

That wasn’t so hard, right? Now take your bacon, and cube that as well…

Since bacon is one of only a few ingredients, I suggest spending a little bit of extra money on really good quality bacon. Now put onion into the pan with a little oil, and cook on medium until tender, about 10 minutes or so. Now add bacon, and cook until crispy, about 10 more minutes. Then remove the bacon and put into a small bowl, and add your corn.

Cook until tender, about 10 minutes. You can add a splash of water to help it along too. Season( I added pepper but the bacon should add plenty of salt). Now add back in the bacon, and your done!

Next, eat this whole bowl.

Fresh Corn with Bacon

Prep Time: 10 Minutes

Cook Time: 25 minutes

Yield: 4-6 Servings


  • 5 Rashers Good Quality Bacon
  • 5 Ears Corn
  • 1/2 Red Onion
  • Salt and Pepper To Taste

Cooking Directions

  1. Dice onion and bacon. Saute onion until soft, then cook bacon until crispy.
  2. Add corn, and cook until done, about 10 minutes(add some water if needed)
  3. Serve.
