Crispy Green Beans


This is the best way to cook green beans. My dad used to make  Szechuan green beans that were spicy and were flash fried in the wok. Since I don’t have a wok, and I’m generally scared of frying, this is my sort of version of what he used to do. The beans somehow transform and become kind of crispy but soft too, it’s seriously amazing, even if you think you don’t like green beans.

Trim green beans and place on a roasting tray all in one layer:

Mix carefully with olive oil, salt and pepper. Preheat oven to 250C, then place in the beans in the oven. These should cook for about 15 minutes, but I check them every 5-10 minutes just to make sure they aren’t burning. When done, they should look like this:

Now place in a bowl, and add the tiniest bit of balsamic vinegar just to add a little tang.

Crispy Green Beans

Prep Time: 5 minutes

Cook Time: 15 minutes

Yield: 2-4 Servings


  • 500g Green Beans(enough to fit on tray in one layer)
  • 2Tbl Extra Virgin Olive Oil
  • Salt & Pepper
  • 1tsp Balsamic Vinegar

Cooking Directions

  1. Preheat oven to 250C
  2. Trim Beans and place on tray in one layer
  3. Mix with olive oil, salt and pepper
  4. Cook for approx 15 minutes
  5. Remove and add a dash of balsamic
