Plum Apple Crisp
First, if you wanna be smart and not do this last minute, then be like me and make the topping ahead of time combine oats, flour, almonds, and sugar in a bowl. Dice up some butter (and make sure its super cold) then add that to the mixture. Now for the fun, stick your grubby digits in the bowl and start mixing the butter into the other ingredients. You want it to start crumbling (go figure) into tiny little pieces so that the whole thing is a pretty even mix of flour, sugar, butter, etc.
Of course, if you want to leave out the flour, you can, a nutty, oatty topping is just as good. Now you can stick this in the fridge until you are ready to bake.
Im using some granny smith apples just to mix it up, but could use all plums of course. Peel, core and slice apples(I suggest one of those apple corer slicer things, they will make your life so much easier). If you are using a slicer, you’ll get 8 slices.
I took each one of those and made it into 3 slices, so do the math on that. Now slice the plums in similar size.
If you are leaving this alone while making dinner, then put the apples in acidulated(lemony) water so they don’t brown. Once ready to bake, first butter your dish, then add the layer of apples. Now add some brown sugar. Next layer on the plums, and finally the blueberries. Add more brown sugar depending on the sweetness of the fruit.
Note: I should have added some cornstarch (cornflour?) to keep it from being too runny, so if this is a concern for you, add some cornstarch.
Finally, layer on your yummy topping and bake at 180C until bubbly and golden brown.
