Tomato Basil Bruschetta


Bruschetta is so easy and good for quite a few things. First, serve this to people at a party and they will all love you. Second, if you have any leftover, it makes a great topping for poached eggs, see here. Or, need pasta sauce? Done.

 garlicextra virgin olive oil

Chop the tomatoes into smallish, bite size peices. Then take a few basil leaves, stack them on top of each other, then roll them up like a cigar. Carefully chop into thin strips, or if you prefer to tear your basil instead of chopping, go right ahead! chop the garlic, then add that and salt, pepper and olive oil and vinegar. Mix everything together. If possible, let sit for at least 30 minutes to let the flavours melt togather, then toast some slices of bread, or a baguette, and dig in!sliced breadbruschetta

4-6 roma tomatoes

2 cloves garlic

2tbl balsamic vinegar

Good Olive Oil

Fresh Basil



Crusty Bread, toasted

    This makes my mouth water! I am going to use the tip on how to chop basil, I was only thinking last night how random my basil bits are and how do people make even slithers.
