Salted Caramel Fudge Brownies


♥ Here’s a good one for Valentine’s Day…♥

First, to make the caramel, melt the sugar in a heavy bottomed pan slowly, but dont stir! Keep an eye on it as it will go from caramel to burnt in 2 seconds. Once its a nice caramally color,add the butter, then take of the heat and add the cream(it will bubble like crazy, don’t be scared). Be careful as it is really hot! Keep stirring until you have a nice consistency, then let cool.

While your caramel is cooling….

Melt the butter and chocolate slowly in a double boiler until melted. Pour into a medium bowl, then add flour, sugar, cocoa, eggs, vanilla. Mix well.

Line a square baking dish with foil, so that it hangs over the sides(easy to get them out later), and spray with non stick spray. Pour half the batter in, then dab half of the caramel evenly over the batter with a spoon. Pour over remaining batter, and the add the rest of the caramel on top. Using the end of a spoon, gently run it through the batter like so…

Then, Sprinkle the top with flakes of sea salt. Bake for about 30-35 minutes at 170C. The edges should slightly come away from the pan but the center should still seem a bit gooey.

Let cool for two hours. Once cooled, slice into squares and try not to eat them all. No really, either make these for a party or plan to take them to work because you won’t be able to help yourself!

For Caramel:

1 ½ cups sugar

1 cup cream(or full cream milk)

2 Tbl Butter(room temp)

1tsp Sea Salt

For Brownies:

85g unsalted butter

1 cup flour

1  cup sugar

3 Eggs

2 tsp vanilla extract

7 oz Dark Baking chocolate (about 225 grams)

3 Tbl  Cocoa powder

Pinch of salt

    Hi – I’ve been desperately looking for a salted caramel brownie recipe and now I have found yours…yay! Quick question when making the’s simply putting the sugar in a pan and heat?? Nothing else to add to the sugar??
    I’ll let you know how my brownies go…after I hear from you :)

      Hi Arlene! You need to melt the sugar slowly and then add butter and cream per the recipe. You can make caramel with just sugar but it would become hard when cooled, not gooey like a caramel sauce. Let me know how they turn out!
