Perfect Citrus Slices


In fancy chef land, this is called Supreme (soooo-prem), but don’t be scared by that word, this is a great way to add citrus to your dishes. First, cut off the very ends of the fruit so you have a flat surface to work on. Then, take your knife and just cut away the peel slice by slice

Then take your knife and carefully go in between each segment and cut in towards the center, and boom! you have perfect little segments, with no skin and no bitter white parts. With the leftover fruit you can just squeeze the juice out and use it for a vinaigrette or sauce or whatever.
