This is an easy way to add some flavour to eggplant. And it’s super easy to do. Take one whole eggplant, or a couple small ones, and slice into rounds. Take 3 eggs and mix in a medium bowl or shallow dish. Add your favourite spice. Here I’m using a brilliant spice blend from N. Africa called Ras El Hanout. It’s a mix of about 30 different spices and has an earthy, warm flavour. You should be able to find it in any specialty market. So, add spice to the eggs and then put in the eggplant and let it soak for about 20 minutes.
I used a bowl, but a shallower dish would be better! Be careful not to add salt yet as it will make the eggplant start leaking moisture.
Get your grill or pan nice and hot, then carefully add the slices of eggplant. Cook for about 10 minutes or until the eggplant is fork tender. And that’s it. You’ll see that the combo of egg and spice really helps out the bland eggplant without a lot of added fat.Once cooked, add a pinch of salt.
